I make Murgh Makhani (Butter Chicken) except I use only cauliflower instead of chicken. With a side of naan, it’s heaven. I use this recipe as my base recipe with my own modifications to taste. Are mushrooms veggie enough? I like mixed wild mushrooms saute in butter and just a bit of whatever herb strikes my fancy that day.
Also good is whole lotus root stuffed with mung beans and braised in stock.

We eat seasonally, so my favourite vegetable changes all the time. At the moment, it’s the very first of the season’s purple sprouting broccoli – when it’s steamed it’s as good as any asparagus (my favourite in May). But then there’s roasted red peppers, chicory and orange salad, creamed parsnips …. hard to choose, really

my fave supper is 2 large artichokes, but i don’t think steaming an arti counts as a “dish”.
being japanese, steaming the freshest veg with ginger and tossing with soy and serving with brown rice is the best ever. if i’m especially hungry, after eating the veg & rice, i’ll pour the steaming water over another bowl of rice and top with nori (there are different flavors of chopped nori for rice). does that count as a dish?
how about frying a strip of bacon, tossing a pound of haricot verts in the hot fat until tender. toss a handful of slivered garlic in pan until browned and serve with lemon wedges (or red vinegar) and the crumbled bacon? my totally americanized brother loves that. toasted sliced almonds are very good, if they’re handy. after our mom died, i did all the cooking and it’s the only thing any of my brothers ever told me to make again. of course, works for lots of other veg, but green beans were really cheap when we were kids. i suppose carrots are cheapest now.

I love a really good ratatouille made from my own garden. My Mum used to make it a lot in the summer when I was little so it’s totally comfort food for me. I think it’s one of the best ways to eat courgettes.

Roasted cauliflower with lemon and garlic, no fresh tomatoes sliced and lightly sprinkled with sugar and then scattered with parsley and S&P, and then again how about……with vegetables there should be no one REAL favorite, you would miss out.

gado-gado, of course, either it is a bowl of steamed greens or raw ones, it is always good accompanied by light or heavy peanut sauce, depending on how rich you want to have it. I also love it eaten with tempeh goreng (fried tempeh), which is dipped in rice flour, garlic and chopped celery batter, and shallow fry. YUM!

It’s soooo hard to choose my very favorite, but I guess for sheer comfort, I’d have to say the traditional Green Bean Casserole. But it has to be the original recipe, no tweaks allowed!

Broccoli with tofu in teriyaki sauce over rice noodles
Simplest and fastest to make and I can’t get enough of it. Somehow the tofu and broccoli mild sweetness echo with each other, while their texture complement and the rice noodles wrap the whole dish up. It’s not 7:00 yet but I get hungry just thinking of this broccoli dish
