Mutton Ham – its an old stuff preseved ham from mutton, ie older than lamb sheep. Mutton isn’t very popular these days and people are missing a real treat. I discovered this recipe in an old cookery book and I make it as often as I can get a leg of Mutton !
Ingredients for Mutton Ham
leg of mutton
brown sugar 150 gm
ground ginger 1 tbs
ground mace 1tbs
ground pepper 1tbs
ground cloves 1tbs
fine sea salt 150 gm
Combine spices and sugar
rub into the leg of mutton in a deep trav
Stand for about 2 hours then rub in the salt, cover and put in a cool dark place, I use my porch but a cellar is cood, fridge is too cool, you are looking for about 6 C or lower
keep rubbing in the cure twice a day, if liquidfied spoon and rub. Do this for 6 days
back in
Soak for a couple of hours. put in water with herbs, bay, rosemary, thyme, some honey and ground pepper, simmer till tender
