Mine has got to be Waffle Berry Pie. I got the recipe off my sister who got it off a Pampered Chef host but I don’t know where the original recipe comes from. It’s definitely a firm family favourite now. It’s sublime both hot (preferred by my OH) or cold (preffered by me) I’ll upload the recipe but feel free to edit my comment if it’s way to long
2 packets (240g each) Sweet Waffles
300g Frozen Raspberries
200g Bar of White Chocolate (Broken into squares)
55g/2oz Caster Sugar
15ml/1Tablespoon Plain Flour
570mls Soured Cream (2 Cartons)
3 Eggs
1 Teaspoon Vanilla Essence
Preheat Oven to 200°/ Gas Mark 6
Cut the waffles into small squares and put half in the bottom of a deep dish. Layer ½ the fruit on top and then ½ the chocolate.
Layer remaining waffles and then the fruit and then the remaining chocolate.
Whisk together the cream, eggs and vanilla essence.
Combine with the flour and sugar.
Pour evenly over the waffle mixture.
Allow a few minutes for it to sink in.
Bake for approx half an hour until golden and set in the centre.
Leave to stand for 10 mins.
Sprinkle with icing sugar or grated white chocolate.
Yummy, yummy, yummy.

Insalata Caprese with fresh mozzarella, ripened tomatoes and finished with fresh basil leaves with an aged balsamic and olive oil vinegraitte. Yummy!
And ‘strawberry soup’ from my childhood – crushed strawberies + sugar + milk. Tastes simple but terrific. Sometimes I add a pinch of vanilla and blender everything together, but still I’m in love with that forst simple preparation.

When it comes to summer and a meal that evokes that lightness of heart, I turn to food that needs little preparation, certainly no application of heat and can be eaten with one’s fingers, so sensually.
I’d combine plates of really good quality hams (probably Spanish/ Italian varieties – they do pigs such justice) with fresh salads full of home-grown vegetables and herbs. On the weekend I ate the first sugar snap pods straight off the plant – divine!
A wonderful selection of cheeses from soft, fresh buffalo mozzarella to a cream goat’s cheese to some semi-soft rind-washed favourites to stronger, harder cheeses that have been carefully aged to some rich, unctuous deep blues!
With these I’d have some sharp, flavoursome savouries such as balsamic onions, peppadews, olives.
Fresh, home-baked bread.
And a wonderful pile of fruit. I’d have to indulge myself by including some alphonso or kesar mangoes, in season just now, imported from India/ Pakistan. Such a treat!
I’m salivating already!

For my inspiration when the summer arrives I move my focus to the Mediterranean and the Middle-East. Their food reflects so well the sunny, warm landscapes, seasonal and fresh fruits of the land and generosity of the hosts.
My favourite meal is a full array of ‘mezze’ (small appetizer size) platters to be enjoyed with good friends. I would have: humous, tsatsikis, olives, grilled aubergine dip, herb salad, aubergine with beetroots and goat cheese salad, fried okra or courgettes, Turkish grilled peppers, green beans cooked in tomatoes, ‘fattoush’, a Syrian combination of salad leaves, herbs, cucumbers, and tomatoes with the interesting addition of pieces of toasted pita bread. It would also offer Lebanese cheese (home-made labneh made from goat milk yogourt), grilled Halumi cheese, Moroccan carrot salad, stuffed baby tomatoes and spinach filo parcels and yogurt – all this served with freshly baked pita bread and a cold rose wine from the mountains of Lebanon.
If I needed to have just one of the above, I would select the herb salad served as a mezze, or in the middle or at the end of a meal before desert to cleanse the palate. This was a special treat first discovered at Ottolenghi, the famous London-based eaterie.
From my garden, I pick whatever the best herbs are at the time – normally parsley, coriander, dill, mint, aruga (rocket), cress. The leaves are cleaned, dried thoroughly and broken up with the fingers in small leave-size bits. And, just before serving, the leaves are wetted slightly with a vinaigrett of lemon, honey and light olive oil, with salt and pepper. Like eating a bit of the summer sun!

Grilled T-bone steak very rare, slathered with bleu cheese and a dash of garlic, served with grilled mushrooms, tomatoes and eggplant. Fresh salad greens with thin sliced Vidalia onions, tossed with asian vinegar and olive oil dressing.

Well My favorite food to make during the summer is fresh crabs. I like to go crabbing early morning and then come home have a fantastic crab feast with friends.

Buffalo mozzarella (all soft and milky when you tear it open) with baby plum tomato and basil salad (thinly sliced, scattered with Maldon sea salt, finely chopped garlic, torn basil leaves and extra virgin olive oil, left to settle for a while until the tomato juice mixes with the oil and salt) .. chilled and served on a hot evening, utterly simple and real bliss.

My favourite summer dish is Cold Soup with Buttermilk (I use Kefir), boiled eggs, beets, cucumbers, green onion and dill. You just cook the beets, then shred them, add chopped egg, cucumber, finely chopped dill, green onion, lots of salt and pour cold kefir over it. The beets make the soup a lovely purple colour. I can eat it three times a day during the hot summer days.

My favorite summer meal is ANYTHING that comes off the grill. Meats, vegetables & even some fruit taste so much better to me when grilled outside on a hot day. Finish it off with fresh, seasonal fruit & homemade ice-cream or yogurt.. a perfect ending to a perfect meal. Yeah summer!!!!!!

My favourite meals in summer are light and full of taste, I dont have a particular favourite but enjoy lots of different textures and tastes and think a salad offers lots of choice. I particularly enjoy apple slices and strawberries in a salad as its really refreshing. I also love feta cheese cubed in a green salad with toasted pine nuts sprinkled on top. A salmon fillet on a BBQ and served with a lemon wedge with a jacket potato and vegetable is also a family favourite-a quick and easy meal and fab with a glass of chilled wine.
