My favourite meals in summer are light and full of taste, I dont have a particular favourite but enjoy lots of different textures and tastes and think a salad offers lots of choice. I particularly enjoy apple slices and strawberries in a salad as its really refreshing. I also love feta cheese cubed in a green salad with toasted pine nuts sprinkled on top. A salmon fillet on a BBQ and served with a lemon wedge with a jacket potato and vegetable is also a family favourite-a quick and easy meal and fab with a glass of chilled wine.

My favorite summer meal is ANYTHING that comes off the grill. Meats, vegetables & even some fruit taste so much better to me when grilled outside on a hot day. Finish it off with fresh, seasonal fruit & homemade ice-cream or yogurt.. a perfect ending to a perfect meal. Yeah summer!!!!!!

Grilled vegetables tops my list, you can vary it ad infinitum with different salsas and they go with almost anything summery!
