Let me introduce Beth from Dirty Kitchen Secrets! I met her last year at the first European Food Blogger Connect which she also happened to organise. Half American and half Lebanese, her passion for good food is relentless and I’ve dubbed her the Lebanese cuisine expert here on Greedy Gourmet. For a change I can’t complain about the British weather. It’s been ultra warm this past week and we’ve been enjoying the sunshine every day in the park and garden. I felt it was time for a change and decided to get all my hair, which almost reached my waist, chopped off today.

General Tso’s what?!? Many of you in USA and Canada know General Tso’s Chicken as a standard item on every Chinese restaurant menu. The moment I saw the recipe on Bobby’s site called Blog Chef, I just knew I had to make it. Unfortunately, I ran into some problems…

Hake, sole, cod and salmon are among my favourite varieties of fish. Isn’t it funny when you can buy something for dirt cheap, you don’t think much of it; instead more expensive stuff holds your attention? Hake is one of the cheapest fish available in South Africa and yet I took it for granted. Since living in the UK it has made a rare and costly appearance here and there and I miss its white, moist and flaky meat. Fortunately, I’ve made some other discoveries along the way and one of them is monkfish.

It was inevitable. Of course the first recipe posted this year will be a healthy one. After scoffing down copious amounts of fatty foods and guzzling booze by the bucket even the most health-conscious individual must be feeling slightly guilty after all the debauchery. If I received a penny from every person who’s going on a diet in the New Year, I’d be a millionaire.

Forget the boring salad leaves, cumbersome cucumber, tired tomato, relentless onion, overly-used olive oil, gimmicky fancy vinegar and other what-have-you’s. If you’re like me, you’ll be just after the champion chicken and morish mango anyway, so why bother faffing about with the former ingredients if you could have just the star ingredients on your plate? Now this is my kind of salad, tuck in!

Other than mentioning it fleetingly in a couple of posts, I’ve remained mum about my diet and progress. Having tried all the famous crash diets like the Bread & Butter Diet, Russian Air Force Diet and Atkins, Weight Watchers was the only one that worked for me years ago and has again. Since March I’ve been dieting on and off with much success. So how much have I lost?

One of the things I love about roast chicken is its versatility; so much so that leftovers can be transformed into a totally different meal. Take this salad for example. Cool and refreshing, not to mention easy and quick to make; ideal for a hot summer’s day or for taking to work to gobble up in front of the computer.
