As if we haven’t eaten enough already we got up from the table, took what felt like a few steps and plopped ourself in a beer cellar not far away. This time we were treated to tasting speciality beers specifically from the Northern France region.

After we prepared the Ch’tiramisu we got started on the main meal which in French is called Pavé de cabillaud au miel de fleur de bière, palette colorée de légumes de saison. It is a very simple yet nourishing dish from Northern France that was enjoyed with some white wine and bread on the side.

Ch’tiramisu is Northern France’s answer to Italy’s Tiramisu. What a strange name, I thought. Where is it from? A quick search on the net yielded very few English results and the rest were all in French. There is a famous French movie, called Bienvenue chez les Ch’tis, which means “welcome to the sticks”. “Ch’ti” means out in the country and is associated with the cold and rainy Nord-Pas-de-Calais region in Northern France where they also speak Ch’ti dialect.

All our noses were pressed against the shop’s window display. Our eyes darted from one goodie to the other with mumbles “I want that…and that… and that” in between heavy sighs. Little did we know this is where we will be enjoying our mid-morning tea!

Not one, two or three alarms but FOUR were set to wake me up on the day at 3.15am. No, I have never heard of obsessive-compulsive disorder. I only checked that my passport is in my bag something like ….uhm….twenty-four times. After having struggled so much with just obtaining a visa the last thing I wanted to do was blow this trip by oversleeping. For those of you who wondered which alarm won, it was my old-fashioned clock, which rang FIFTEEN minutes early. There was no time to ponder about how I am possibly going to cope on four hours’ sleep; I had a train to catch!

When Sarah from wearesocial approached me I was over the moon. Who possibly in their right mind could say no to an opportunity to visit France, all expenses paid? There was just one big glitch. Only three weeks were left before the adventure to attain a Schengen visa which seemed a mission impossible.
