Everyone is complaining about the “hot and dry summer” Britain is supposed to be experiencing at the moment. Anything but! After five years of living in this country I’ve learnt to ignore any weather forecasts but check out the Met Office’s Rain Radar instead and if all seems clear, make a mad dash for the park! If there is time left after basking in glorious sunshine we even have a picnic (full review here). Now this is where I get curious…

    my favourite savoury item is the Pizza Rustica (an Italian inspired pie) from Nigella Lawson’s book Domestic Goddess, it is great for making in advance & eating chilled. It serves 8 (very generous portions) and is full of lots of wonderful Italian ingredients like mozerella, provolone, prosciutto & mortadella… Very tasty indeed!

    Chicken with Oregano and Red Peppers on bed of spinach and rice.
    Fry the chicken then add a little stock some white wine and tomoates for a really healthy and tasty dish.

    We like to take an assortment of fruit and veg sticks, and various dips and soft cheeses, along with Doritos or Pringles. It;s lovely to sit by a babbling brook with your wine chilling in the water, and dip carrot or apple sticks into soft cream cheese/chive dip, or dunk Pringles into cheese and spring onion baked potato topping.

    English muffins with cream cheese, fresh chives and smoked salmon. Scones with fresh cream and pineapple & passionfruit curd. Washed down with pimms & lemonade.

    So simple yet so reminiscent of glorious childhood days – it has to be egg and tomato finger rolls with a few cooked chicken legs for those with a big appetite. Always room for a bowl of lush strawberries covered in thick clotted cream and a sprinkling of sugar. Cloudy lemonade to wash down this offering and even a flask of tea at hand for when the inevitable downpour starts and you are banished to the car!

    I like to make my own Quiche Squares, I use seasonal vegetables and leftovers from our family meals, they are perfect finger food for picnics.

    Picnics are for long ,sunny(?) days and are for relaxing, so no long hours in the kitchen preparing!! So … chunks of fresh baguette,houmous,cherry tomatoes,cucumber cubes,roasted chicken drumsticks followed by any berry fruits and something chocolately for a treat!

    Instead of your boring old sandwiches try a stuffed loaf instead they are ideal for a picnic:

    Ingredients:
    A crusty loaf (pref round)
    Salami, Parma ham etc
    Your favourite cheese
    Sun dried tomatoes
    Olives
    Roasted peppers

    Method:

    Slice the top off the loaf and take out the bread inside.
    Layer all your ingredients inside.
    Place on a place and cover with clingfilm.
    Put in fridge
    Place a plate on top weighed down with a couple of cans of beans
    Leave for about 2 hours
    Slice and serve

    I don’t think you can beat plain but good quality ham & mustard, and cheese sandwiches, a tube of pringles, good quality sausage rolls or a chicken leg, and some sort of fresh fruit. Oh, and some Cadburys Mini Chocolate rolls!

    My favourite is quite simple, but delicious. Half a baguette filled with slices of turkey and cranberry sauce. Not forgetting a glass or two of white wine. Forgot to mention the most important ingredient of the meal – the other half gets eaten by my sexy companion!

    firstly some olives / crudites and dips
    followed by french bread creamed cheese and smoked salmon then a dainty but very naughty strawberry tart all accompanied by a chilled glass of wine or fizz if the occasion merits
