    Trifle! My sister makes one packed with fruit which provides a refreshing alternative to Christmas pudding after Christmas dinner. I wouldn’t describe it as a healthy alternative though as she doesn’t skimp on the cream or alcohol ;) Even my husband reckons it’s his favorite part of the meal now!

    It’s got to be the most heavenly chocolate recipe ever and its one I make every Christmas.

    Chocolate Torte

    7 ozs plain chocolate
    4 ozs caster sugar
    6 tablespoons water
    4 egg yolks
    2 tablespoons brandy
    1 pint double cream

    To Decorate

    A little sifted icing sugar
    12 large strawberries – sliced
    A little single cream

    You will need an 8″ loose bottomed or spring form tin, oiled and lined with clingfilm.

    Break the chocolate into sections and drop into a processor. Process for one minute or until just a few pieces remain in the powdery chocolate, Alternatively, finely grate the chocolate.

    Measure the sugar and water into a small pan and heat gently until the sugar has dissolved, stirring occasionally. Turn up the heat and boil briskly for 3 – 4 mins to obtain a thin syrup. Once boiled, put the chocolate into a small bowl and pour over the sugar and water mixture. Stir to mix. Cool a little then add the egg yolks, mixing well. Then add the brandy and stir well.

    In a separate bowl beat the cream to a soft floppy consistency then fold in the chocolate mixture. Spread in the prepared tin, levelling the top with the back of a spoon. Cover with clingfilm and transfer to the freezer for a minimum of 4 hours to freeze.

    Take the torte from the freezer 20 mins before serving. Remove from the tin, strip away the clingfilm, place on a plate and leave to thaw. Sift a little icing sugar over the surface of each plate, place a wedge of torte in the centre and arrange a sliced strawberry around each serving. Drizzle a little cream over each portion and serve.

    Moist turkey with cranberry. Just visualise you are back from the pub and Mumsy or wifey ( or both ) have the dinner ready. You take a nice moist glistening slcie of turkey, and you dip it in the splodge of cranberry sauce at the side of the plate. In it goes, along with a swif of watneys, can’t beat it.

    I can even scoff a whole tray mince pies, for goodness sake!

    I like to eat a plump christmas pud with both custard and double cream,
    But what is my very favourite christmas dish dream,
    Its the one that I have to loosen my clothes for and let off steam,

    I like best of all a dish of Mistletoe,
    With a very tasty kiss, nice and slow,
    It makes me so very happy from head to toe!

    But my no1 christmas dish has to be the platter,
    In the company of friends we enjoy it over a good natter,
    So just like the christmas turkey, I cant now get any fatter!
