    The night I proposed to my wife I cooked a tomato and bulgar wheat salad, duck and pistachio ice cream. It took me all day as I don’t usually cook. Anyway, must have been OK as she said yes!

    2 Years ago my partner made these and they taste great
    Jam Hearts. Have ago ….. easy to make.

    Ingredients
    375 g ready-to-roll Puff pastry
    For the filling
    85g caster sugar
    2 tsp ground Cinnamon
    1 litre double cream
    225 ml Eggs, custard, cold, thick and sweet
    6 tbsp raspberry jam, (or strawberry)

    1. Set the oven to 180°C/gas 4.
    2. Roll out and trim the pastry, and then brush the surface with water and sprinkle with caster sugar and cinnamon.
    3. Fold pastry inwards on both sides to centre.
    4. Brush with water again and sprinkle with the caster sugar and cinnamon mix. Fold the pastry over to create a parcel. Cut into heart shaped slices and place them on baking tray. Cook for 7-10 minutes until golden. Cool on a wire rack.
    5. Meanwhile, whisk the cream until thick and beat in the custard.
    6. Sandwich the pastry hearts with a dollop of jam and the whipped cream mixture.

    Amalfi Lobster salad-Perfect for two to share with good bread and chilled white wine.

    4 Lobster Tails, Cooked

    Mixed baby leaves such as chard, rocket and spinach

    6 Ripe plum Tomatoes

    1 Red Onion (mediumish in size), Peeled And Finely Sliced

    A good 4 or 5 table spoons fresh chopped flat leaf Parsley

    Juice of 1 Lemon

    3-4 good glugs of good Olive Oil

    Sea Salt & Cracked Black Pepper

    To prepare/Serve:

    Remove lobster meat from the shells and chop into 1 inch pieces. Place in a bowl. Cut tomatoes into wedges and then slice the wedges in half so you have nice rustic chunks of tomato. Add to the bowl. Add the onion slices, parsley, lemon juice, and olive oil and toss well to combine. Season with salt and pepper. And serve with lemon wedges for squuezing over.
