    Anything from Hotel Chocolat suits me fine as a dessert, or this lovely chocolate mousse!

    150 grams (3/4 cup) of good quality, dark, semi-sweet chocolate chips
    2 tbsp of whipping cream
    3/4 cup of whipping cream
    1 large egg, separated
    1 Tbsp Baileys Irish Cream (optional)
    Extra chocolate for shavings or fresh raspberries for decoration (optional)

    1.Add 2 tablesp of cream and choc to a clean bowl. Place bowl on top of a saucepan filled with enough water to simmer for several minutes. Make sure the water doesn’t touch the bowl.
    2.Heat gently and stir choc/cream mixture with a metal spoon until the choc is melted and smooth.
    3.Remove the chocolate mix from the hob & cool slightly. Add the egg yolk to the mix while stirring until combined and smooth. Place the bowl over the saucepan filled with hot water to keep the chocolate warm but don’t turn the heat back on.
    4.Whip the cream until soft peaks form. Add half of the melted choc to the whipped cream with the metal spoon and fold until just combined. Fold in the remaining chocolate mixture but be careful not to over mix. Set aside.
    5.Use a clean electric mixer to beat the egg white until soft peaks form and then fold it into the chocolate mousse mixture. Spoon mousse into serving glasses. Cover and leave in fridge for 2 hours.
    6.Serve with chocolate shavings & fresh raspberries.

    CHOCOLATE COVERED MARSHMALLOWS

    Ingredients:

    1 packet of Hotel Chocolat milk chocolate chips (you can use dark or white chocolate if preferred)

    2 oz cocoa butter or vegatable oil

    1 large packet of marshmallows

    toothpicks or skewers

    Method:

    Combine chocolate chips and cocoa butter in a small pan over medium heat, stirring constantly until melted and smooth. Alternatively, you could use the microwave to melt the chocolate, but you must be careful not to overheat it. Stir it every 30 seconds to be sure.

    Insert a toothpick or skewer into the top of each marshmallow. Dip them one at a time in the chocolate and place on a waxed paper lined tray to set.

    Store chocolate marshmallows in an airtight container. Hide them if necessary!
