My favourite sausage recipe is ‘Hedgehog’, because it reminds me of when my children were all small and we had this regularly.
You make some lovely creamy mash, make it into the shape of a hedgehog. Then use lovely succulent sausages as the spines, peas for eyes and nose and it’s done!
Actually just thinking about it, instead of serving gravy in a boat, could have poured round the base of the hedgehog and he would look as though he was standing in a puddle.
I’m going to make it this weekend and get everyone home for some delicious nostalgia!

Sausage and bean casserole.
I was delighted to be one of the winners of this book. Books basedaround one ingredient cansometimes be a bit contrived but this one is brilliant. Lots of lovely ideas and twists ontraditional dishes. I made the sausage, Portobello mushroom and winter root souflette at the weekend and it was delicious.
