Cherry Tomato, Feta & Basil Kebabs

Who isn’t on a diet at the start of the year? If you’re hosting a party after Christmas and worrying about what you should serve, these little kebabs will help you out. Not only are they fun to prepare and look elegant, they’re healthy too. This recipe comes from Gordon Ramsay‘s new Fast Food book and indeed it doesn’t take more then ten minutes to make.

Cherry Tomato, Feta & Basil Kebabs
Serves 10
Preparation: 10 mins – Cooking: None

Cherry Tomato, Feta & Basil Kebabs

Ingredients
  • 300g (10½ oz) feta cheese
  • 30 cherry tomatoes
  • 30 basil leaves
  • salad dressing (optional)
Method
  1. Cut the feta into 2cm (slightly less than 1 inch) cubes and halve the cherry tomatoes. Thread them on to cocktail sticks, sandwiching a feta cube between two tomato halves. Thread a basil leaf on to each end and arrange the kebabs on a serving plate.
  2. If you have any salad dressing available, you can lightly sprinkle some over the kebabs. Extra virgin olive oil and red wine vinegar in a ration of 2:1 will also do.
