Anytime you make a big bird like turkey, you’re bound to have leftovers. That’s why it’s so nice to have go-to recipes to use up that leftover meat.
I love this leftover turkey stroganoff recipe for several reasons and know that you will too. This rich, indulgent comfort food is so delectable yet so simple to make. Here’s everything you need to know about this tasty turkey recipe:
Why You’ll Love This Recipe
You’ll love this recipe because it’s economical, uses up leftovers, and can be whipped up in less than 30 minutes, making it the perfect weeknight meal.
Special Ingredients You Need For This Recipe
The only special ingredient you need for this recipe is mushrooms. Mushrooms are a staple in stroganoff and really make the recipe, and you can use any type of mushroom you like. Since mushrooms can be sometimes hard to purchase, just buy what’s available. Feel free to use canned mushrooms if you can’t find fresh ones.
How To Make This Recipe
Sauté the onions and garlic until soft and translucent.
Fry the mushrooms with the onions for 5 minutes.
Stir in the cornstarch.
Add the mustard.
Tip in the cooked leftover turkey meat.
Give everything a good stir.
Pour in stock.
Let everything simmer for 5 minutes.
Add sour cream.
Let it bubble for 2 minutes. Done. Enjoy!
Top Tip
For an extra creamy finish, top with even more sour cream. Just an extra dollop of sour cream will make the recipe that much tastier.
What to Serve with Your Leftover Turkey Stroganoff
There are lots of dishes you can serve with your turkey stroganoff. Here are some of my favorites:
Sides
- Roasted Artichoke Hearts: Leftover turkey stroganoff is a great recipe, but to have a balanced meal you need some more veggies. Get in your daily amount by having Sicilian roasted artichoke hearts.
- Sugar Snap Pea Salad: Again, get in your daily amount of vegetables with a delicious salad. Taste amazing with your turkey leftovers.
Desserts
- Biscoff Rocky Road: This tasty chocolate dessert is the perfect little morsel to have after something as rich and filling as leftover turkey stroganoff.
- Orange Tart: Offset the stroganoff with something light and fresh like an orange tart. It’ll give you a satisfying, flavorful dessert without being too much after indulging in your leftover turkey stroganoff sauce.
Cocktails
Although I don’t recommend having a cocktail with your leftover turkey dish, I do suggest a glass of wine. A dry, full-bodied red will be a delicious wine pairing with your turkey stroganoff.

Popular Substitutions For This Recipe
Egg noodles
There are endless substitutions for cooked egg noodles. You can use pappardelle as mentioned, but you can also use rice, penne, or even mashed potatoes. Also, feel free to use wide egg noodles if you prefer.
Sour cream
You can use greek yogurt or cream cheese instead of sour cream.
Leftover turkey
If you have leftover beef or chicken, feel free to use those meats instead of ground turkey or roasted turkey. Also, if you have enough turkey leftover, mix white and dark meat. It'll add lots of flavor and won't add any stroganoff prep time.
Variations To This Recipe
Chicken
You can make this using chicken instead. If you're out of leftover turkey, or you just prefer chicken instead of turkey stroganoff, feel free to make the substitution. Chicken stroganoff is one of the most underrated dinner recipes!
Top Tip
When making your turkey stroganoff, if your ground turkey is a little dry, add some chicken broth or chicken stock. This will give it some moisture and ensure your turkey stroganoff tastes as good as possible.
How do I store leftovers?
Store leftovers in an airtight container in the refrigerator. Your leftover turkey stroganoff will last up to five days in the fridge at its peak freshness.
How do I Reheat This Dish?
Reheat this dish by placing it in a saucepan on the stovetop over medium-low heat. Stir occasionally. Add extra chicken broth, olive oil, or leftover gravy if it needs more moisture. You can also reheat this dish in the microwave.
