Ingredients

  • 1 tablespoon oil from sun-dried tomatoes
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 2/3 cup sun-dried tomatoes in oil, drained and julienned
  • 2 quarts chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 teaspoons kosher salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes, plus extra for garnish
  • 1 cup medium shell pasta, uncooked
  • 2 cups cooked rotisserie shredded rotisserie chicken
  • 1 cup heavy cream
  • 1 cup fresh spinach, roughly chopped
  • 3/4 cup grated Parmesan cheese, plus more for serving

Instructions

  1. Heat the chopped sun-dried tomato oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes. Add the minced garlic and sauté for another minute until fragrant.
  2. Stir in the tomato paste and julienned sun-dried tomatoes. Cook for about 2 minutes, or until the tomato paste starts to deepen in color.
  3. Add the chicken broth and bring to a simmer. Stir in the dried basil, oregano, thyme, salt, black pepper, and red pepper flakes. Let simmer for 10 minutes.
  4. Add the pasta shells to the pot and cook according to package instructions until just al dente. Halfway through, add the shredded cooked chicken. Add more broth if needed.
  5. Lower the heat and stir in the heavy cream and Parmesan cheese until the cheese is melted and the soup is smooth.
  6. Add the chopped spinach and keep stirring constantly until it wilts. Adjust seasoning with more salt and pepper if needed.
  7. Serve the soup in bowls, garnished with extra Parmesan cheese and a sprinkle of crushed red pepper flakes. Optionally, top with fresh basil leaves.
