Description

This pear cobbler recipe will keep you warm in the colder months. Find out how to make a traditional American cobbler.


Ingredients

FILLING

  • 10 small pears, peeled, pips removed and halved
  • 45g (3 tbsp) butter
  • 150g (3/4 cup) sugar
  • 30g (1/4 cup) all-purpose flour
  • 7.5ml (1 1/2 tsp) ground cinnamon
  • 2.5ml (1/2 tsp) ground green cardamom
  • 2.5ml (1/2 tsp) ground ginger
  • 2.5ml (1/2 tsp) ground allspice
  • 2.5ml (1/2 tsp) ground nutmeg
  • 2.5ml (1/2 tsp) vanilla extract

TOPPING

  • 256g (2 cups) all-purpose flour
  • 52g (1/4 cup) caster sugar
  • 15ml (1 tbsp) baking powder
  • 5ml (1 tsp) salt
  • 100g (7 tbsp) butter
  • 30ml (2 tbsp) granulated sugar
  • 250ml (1 cup) milk

Instructions

  1. Preheat the oven to 180°C / 350°F / gas mark 4.
  2. For the Filling: Melt the butter in a large frying pan.
  3. Add the pears, sugar, flour, cinnamon, cardamom, ginger, allspice, nutmeg, and stir to combine.
  4. Keep stirring until the sugar has dissolved and the mixture reaches a bubbling point. Let it continue to bubble for 2 minutes or until the sauce has thickened. 
  5. Remove the pan from the heat and stir in vanilla extract.
  6. Pour the pear filling into a 23cm x 33cm (9X13 inch) baking dish.
  7. For the Topping: Combine the flour, caster sugar, baking powder and salt in a large bowl.
  8. Cut the butter into the flour mixture until mixture resembles coarse crumbs.
  9. Systematically pour the milk into the crumble until the topping is just moistened.
  10. Spoon the wet mixture evenly over the pear filling and dollops.
  11. Sprinkle the granulated sugar evenly over the topping.
  12. Bake for 30-35 minutes, or until golden brown.
  13. Serve with ice cream, custard or cream. Enjoy!

Notes

Use only as much milk as needed to moisten the crumble. You don’t want the flour mixture to get too soggy and difficult to handle.
