Description
This goat's cheese, sundried tomato and walnut sandwich is a delicious creamy sandwich that you can prepare in no time at all. Make a large batch and store.

- 30g (1 oz) sundried tomatoes, finely chopped
- 60g (2 oz) soft goat’s cheese
- 15ml (1 tbsp) chopped fresh basil (optional)
- 5 walnuts, chopped
- 15ml (1 tbsp) olive oil, if needed
Instructions
- Place the sundried tomatoes and basil (if using) in a bowl with the goat’s cheese and stir to mix.
- If you find the mixture a bit too stiff add the tablespoon of olive oil.
- Lastly, add the nuts to the filling, mix thoroughly.
- Make you sandwich using this filling and enjoy.
Notes
- Look for sundried tomatoes found preserved in jars of olive oil. They are so much better than the ones found dried out in packets.
- If you like sundried tomatoes, by all means top the filling up with them. Chop and change the quantities of these ingredients to your desire.
