Ingredients

Units Scale
  • 30g (1 oz) sundried tomatoes, finely chopped
  • 60g (2 oz) soft goat’s cheese
  • 15ml (1 tbsp) chopped fresh basil (optional)
  • 5 walnuts, chopped
  • 15ml (1 tbsp) olive oil, if needed

Instructions

  1. Place the sundried tomatoes and basil (if using) in a bowl with the goat’s cheese and stir to mix.
  2. If you find the mixture a bit too stiff add the tablespoon of olive oil.
  3. Lastly, add the nuts to the filling, mix thoroughly.
  4. Make you sandwich using this filling and enjoy.

Notes

  • Look for sundried tomatoes found preserved in jars of olive oil. They are so much better than the ones found dried out in packets.
  • If you like sundried tomatoes, by all means top the filling up with them. Chop and change the quantities of these ingredients to your desire.
