Dukkah. The spice mix is infiltrating our Western plates albeit slowly.

- 1.5kg (3 lbs) joint chicken wings
- 5ml (1 tsp) salt
- 2.5ml (1/2 tsp) ground pepper
- 100g (3 oz) dukkah
- parsley, to garnish
- 200ml (7 fl oz) olive oil
Instructions
- In a pot of boiling salted water, blanch the wings for 25 minutes on medium heat or until cooked.
- Once blanched remove wings from pot and drain well.
- While wings are still warm put them in a container, add the olive oil and cover them thoroughly.
- Add the salt, pepper and dukkah and give the container a good shake to spread the ingredients evenly.
- Place on the grill or griddle pan for 7-8 minutes, cooking for 4 minutes on each side.
- Serve with ketchup or chilli relish.
