Dukkah Chicken Wings


Description

Dukkah. The spice mix is infiltrating our Western plates albeit slowly.


Ingredients

Units Scale
  • 1.5kg (3 lbs) joint chicken wings
  • 5ml (1 tsp) salt
  • 2.5ml (1/2 tsp) ground pepper
  • 100g (3 oz) dukkah
  • parsley, to garnish
  • 200ml (7 fl oz) olive oil

Instructions

  1. In a pot of boiling salted water, blanch the wings for 25 minutes on medium heat or until cooked.
  2. Once blanched remove wings from pot and drain well.
  3. While wings are still warm put them in a container, add the olive oil and cover them thoroughly.
  4. Add the salt, pepper and dukkah and give the container a good shake to spread the ingredients evenly.
  5. Place on the grill or griddle pan for 7-8 minutes, cooking for 4 minutes on each side.
  6. Serve with ketchup or chilli relish.
