Jammie Dodger Blondies

Description

These Jammie Dodger Blondies are irresistible for both kids and adults. This recipe is easy for anyone to follow.


Ingredients

  • 200g (3/4 cup) butter, melted
  • 250g (1 1/4 cup) light brown sugar
  • 3 large eggs
  • 5ml (1 tsp) vanilla paste
  • 275g (2 1/4 cups) plain flour
  • 150g (1 cup) white chocolate, chopped into small pieces
  • 200g (3/4 cup) smooth raspberry jam
  • 21 Jammie Dodgers

Instructions

  1. Preheat the oven to 180°C/fan 160°C/355°F/gas mark 4.
  2. Line a 30x20cm (12x8in) baking tin with non-stick parchment paper.
  3. Using a stand mixer preferably, whisk the melted butter and sugar together until the mixture gets light and creamy. Due to the size of the sugar specks, this will take a little while.
  4. Add the eggs and vanilla and beat until the mixture is smooth. 
  5. Keep the mixer running on a slow speed and add the flour one tablespoon at a time until everything is incorporated. Don’t forget to scrape the sides of the bowl to ensure everything is evenly distributed.
  6. Fold in the white chocolate.
  7. Take 6 Jammie Dodgers and quarter them. Fold the quarters into the blondie batter.
  8. Tip the mixture into the lined tin and spread it into an even layer.
  9. Heat the jam slightly (a quick zap in the microwaves will do!) to make it more pliable. Spread the jam evenly on top of the batter. It doesn’t have to be perfect!
  10. Place the remaining Jammie Dodgers on top.
  11. Bake for 35 minutes, or until cooked. My oven took a good 45 minutes until it was done. Use the skewer test, i.e. it should come out clean, not covered in gooey batter.
  12. Once the big blondie has cooled, cut into portion sizes. Enjoy!  

Notes

  • Store in an airtight container for up to 4 days. It won’t last that long though!
  • You can use smaller Jammie Dodgers, but you’ll need to adjust the quantities used in the recipe accordingly.
