Description

You've never had a casserole like this before. This warming hamburger hashbrown casserole will quickly become a family favourite. Serve with your favourite greens. 


Ingredients

Browned Beef

  • 15ml (1 tbsp) olive oil
  • 900g (2 lbs) ground beef
  • 15ml (1 tbsp) Worcestershire sauce
  • 15ml (1 tbsp) tomato paste
  • 6g (1 tsp) salt
  • 4g (2 tsp) dried oregano

Vegetable Filling

  • 15ml (1 tbsp) olive oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 celery stalks, finely chopped
  • 225g (3 medium) carrots, finely chopped
  • 250ml (1 cup) beef stock
  • 250ml (1 cup) sour cream
  • 120g (1 cup) shredded cheddar cheese

Topping

  • 15ml (1 tbsp) olive oil
  • 900g (2lbs) potatoes, peeled
  • 120g (1 cup) shredded cheddar cheese

Instructions

  1. Preheat the oven to 190°C/fan 170°C/375°F/gas mark 5.
  2. For the Browned Beef: Heat the oil in a large frying pan and brown the beef while stirring constantly. 
  3. When most of the liquid has evaporated and meat browned, add the Worcestershire sauce, tomato paste, salt and oregano. Stir well and cook for a further 2 minutes.
  4. Scoop out the meat and set aside. 
  5. For the Vegetable Filling: Using the same frying pan, gently fry the onions in the oil for 3 minutes. 
  6. Add the garlic, celery and carrots to the pan and stir fry for 10 minutes until the vegetables have softened and reduced in volume. 
  7. Tip in the browned beef, along with the stock, sour cream and cheese. Give everything a good stir and let it bubble away for 3 minutes, or until the cheese has melted. Transfer the contents to a 2 quart baking dish (see notes).
  8. Grate the potatoes or shred them in a food processor. Place the shredded potatoes in a dish towel and squeeze out the excess water from the potatoes. Fluff the potatoes up in a bowl, stir in the oil and season well. 
  9. Evenly top the ground beef filling with the grated potatoes. 
  10. Transfer the dish ro the oven and bake for 40 to 50 minutes or until the potatoes are cooked and browned on top. 
  11. Sprinkle the cheese evenly over the potatoes and bake for 5 minutes or until the cheese has melted. 
  12. Serve immediately with your favorite greens (we had buttered green beans!) on the side. Enjoy!

Notes

  • If you don’t have a 2 quart baking dish, a 8 x 8 x 2in square dish would suffice as well as a 9x13in one.
