Sugar Snap Pea Salad

Ingredients

  • 300g (10oz) sugar snap peas
  • 5ml (1 tsp) caster sugar
  • 15ml (1 tbsp) dark soy sauce
  • 15ml (1 tbsp) rice wine vinegar
  • 15ml (1 tbsp) mirin
  • 15ml (1 tbsp) sesame oil

Instructions

  1. Wash and dry the peas.
  2. Finely slice lengthwise into matchsticks.
  3. For the dressing, mix the sugar, soy sauce, vinegar, mirin and oil together.
  4. Pour the dressing over the peas, toss and serve.

Notes

  • For a less sweet version of this salad you can use mangetout (snow peas) instead.
