A quick recipe search for John Dory on a few food sites left me mostly empty-handed and disappointed. Thanks to Good Taste Foods, this was my first opportunity to taste this notorious fish and I really, really didn’t want to make a cock-up. It suddenly dawned on me you really can’t go wrong with serving a French type of creamy white wine sauce with any type of white fish. It was splendid.
In other news, Neil recently bought me a Canon 5D for my birthday. How proactive, since my birthday isn’t in another 3 months! He got it at a really good price from a work colleague and thought it was too big a bargain to pass on so he pounced. A few days later he brought a posh PDA home. I looked at him quizzically and he read my mind. “No, it didn’t cost a penny,” he replied. Huh? Apparently, his boss was clearing out drawers (the company moved to another site) and came across his old PDA (he uses an iPhone now) and ended up giving it to Neil. I’m starting to get suspicious. What other kind of “pouncing” is he up to at work? Mind you, I won’t mind getting used to this. So if anyone needs “favours” doing, I take bookings now...

Pan-Fried John Dory with Creamy Mushroom and White Wine Sauce
- Total Time: 30 minutes
- Yield: 4 1x
Ingredients
john dory
- 30ml (2 tbsp) butter
- 600g (1.3 lbs) John Dory fillets
creamy mushroom and white wine sauce
- 15ml (1 tbsp) butter
- 15ml (1 tbsp) olive oil
- 1 onion, peeled, halved and finely sliced
- 200g (7 oz) mushrooms, washed and sliced
- 75ml (5 tbsp) white wine
- 150ml (5 fl oz) double [whipping] cream
- salt and freshly ground pepper
Instructions
- Melt the butter in a large frying pan. Fry fish, turning once halfway through cooking time. Cook until opaque and moist on the inside, 4 to 8 minutes. Remove from pan and keep warm.
- In the same pan, add the remaining butter and oil and fry the onion gently until soft and sweet. Turn up the heat, add the mushrooms and fry for 2 minutes.
- Add the white wine and let it sizzle for a few minutes until it has almost completely evaporated. Lower the heat, add the cream, stir the sauce well and when the cream has heated through, season to taste.
- Divide the fish among 4 plates, pour over the sauce and serve immediately.
Notes
- Mash and a green vegetable like broccoli or beans will complete the meal.
- Any white fish can be substituted for the John Dory.
- Use more mushrooms if you like.
- If you like lots of sauces, increase the amount of wine and double cream used. Remember the ratios 1:2.
- Making the sauce is the last thing you should do when you cook a whole meal. The sauce should be served immediately and will not fare well left standing on the hob.

Well I've certainly heard of John Dory, although we mostly catch snapper when we go fishing - have some fresh at the moment so am going to try this recipe tonight! Looks so delish! Never heard of a fishmonger tho - cracked up laughing when I read that - is it a real word? Sounds like some sort of monster with a hunch back and a fish head! I'll let you know how the snapper turns out 🙂

I very seldom come across John Dory - I suspect you need a fishmonger to get it regularly - but I do love ordering it off a menu! Love this recipe for it and as yuo say, what can go wrong with a creamy sauce plus fish?
