Obviously, the first thing you need to do is to not serve this Slimming World beef stroganoff with the rice. Generally speaking, one rice serving would add 1 more syn to your syn allowance. Even though, filling foods such as rice are usually syn free, but this really depends on the quality of the rice.
For example, if you opt for pre-packed and pre-cooked rice, like those branded ones you see in the supermarket, you can easily add 2 syns.
Generally speaking, yoghurt is syn free. Therefore, use only fat-free bio yoghurt for to make a syn-free slimming world beef stroganoff recipe. Avoid using full-fat yoghurts like Greek yogurt. If you have a few syns to spare, then go for it by all means. However, let’s try to keep as syn-free as possible.
Lastly, my beef stroganoff recipe calls for quark. Quark is a fat-free fresh dairy product. It is made from soured milk until it curdles. In terms of making this a syn free Slimming World beef stroganoff, you can easily use quark. Quark is syn-free! So not only does it make this recipe creamy and thickens it up, it doesn’t affect your syns.

Now, as for the beef, make sure you opt for the leanest cut. Lean meat is not only filling, it’s also healthy. Therefore, you can eat as much as you want without counting syns or calories. In contrast, if you opt for a different cut of meat, you might want to double check on your syn calculator.

The biggest trick to this recipe is adding the cream. Or, in this Slimming World beef stroganoff recipe, quark or yoghurt. Remember to use the yoghurt at room temperature. If it’s too cold, it will make your sauce split in a second!
Similarly, when you add these elements, make sure that your recipe is on low heat. Stir it gently.

Slimming World rules are mostly based on low-glycemic foods, so in general you should avoid eating too many carbohydrates in a single portion.
That being said, if you opt for dry pasta like penne or farfalle into this slimming world beef stroganoff, you’ll end up with a delicious pasta bake. I recommend adding only one serving of the pasta into the pasta bake recipe. Remember, try to keep it low on the carbs and you’ll also keep your syns low.
Besides, the slices of lean beef are filling enough, so no need to include too much pasta.

This Slimming World beef stroganoff is a syn-free meal. It’s made with lean beef, mushrooms and quark. This is an excellent mid-week dinner recipe!
- Low-calorie cooking spray
- 500g (1lb) beef fillet, thinly sliced
- 1 onion, peeled and thinly sliced
- 1 garlic clove, peeled and crushed
- 250g (½ lb) mushrooms, cleaned and sliced
- 15ml (1 tbsp) brandy [optional]
- 5ml (1 tsp) Dijon mustard
- 15ml (1 tbsp) lemon juice
- 400ml (⅔ pt) beef stock
- 120g (4oz) quark
- 60ml (4 tbsp) parsley, washed and finely chopped
- Spray a large frying pan with cooking spray and place it on a high heat.
- Brown the beef slices on all sides and set aside.
- Lower the heat, spray the pan again and gently fry the onion and garlic for 10 minutes, or until softened and translucent.
- Turn heat to high and add the mushrooms, stirring constantly for 2 minutes, or until the mushrooms are browned.
- Pour in the brandy, letting it sizzle for a minute.
- Lower the heat to medium, and add mustard and lemon juice and give the contents a stir.
- Pour in the beef stock and let the sauce simmer slowly for about 10 minutes or until the quantity has reduced by half.
- Stir in the quark thoroughly.
- Add the beef back into the mix and let the contents simmer for 5 minutes, or until desired doneness.
- Sprinkle with parsley and serve with your favourite side dish.
- If you’re not following any kind of diet, you can experiment with the cream element of the recipe. E.g. the quark can be substituted with creme fraiche, cream cheese or cream.
