Aloo Ki Sabzi


Description

Aloo ki sabji, also known as aalu ki sabzi or aloo tamatar ki sabzi is an Indian potato curry dish. Traditionally known as a Punjabi breakfast recipe.


Ingredients

  • 600g (1 1/2lb) peeled potatoes, cut in 2.5cm (1in) cubes
  • 30ml (1 tbsp) vegetable oil
  • 5ml (1 tsp) cumin seeds
  • 5ml (1 tsp) mustard seeds
  • 8 curry leaves
  • 2 onions, peeled and sliced
  • 2 green chillies, finely chopped
  • 2.5ml (1/2 tsp) turmeric
  • 2.5ml (1/2 tsp) chilli powder
  • 1.25ml (1/2 tsp) asafoetida
  • coriander leaves, for garnishing

Instructions

  1. Boil the potatoes in salted water until almost cooked - they should have a slight crispy bite to them. Drain and set aside to cool down.
  2. Fry the curry leaves, cumin and mustard seeds in the oil until their aromas are released. This should take around 3 minutes.
  3. Add the onions and green chilli to the spices and fry until translucent.
  4. Sprinkle the turmeric, chilli powder and asafoetida over the onions and stir.
  5. Pour in the cooled down potatoes.
  6. Keep on stirring until the potatoes are completely covered with spices.
  7. Top with coriander leaves and serve.
