Apple & Cinnamon Infusion

Ingredients

  • 600g (1.3 lb) dessert apples, roughly chopped
  • 1 cinnamon stick
  • 60ml (4 tbsp) brown sugar
  • ice cubes, to serve

Instructions

  1. Place the apple, cinnamon stick, brown sugar and 1 litre (4 cups) water in a pan. Bring to the boil, then reduce the heat and simmer for 10-15 minutes, or until the flavours have infused and the apple has softened.
  2. Remove from the heat, cool slightly, then chill in the refrigerator until cold.
  3. When cold, strain the infusion and serve it over lots of ice.
