  • 200g (7oz) sugar
  • 200g (7oz) water
  • 150g (5oz) almond flour, toasted
  • 4 egg yolks, whisked
  • Lemon peel
  • Cinnamon stick
  • Orange peel
  • Coffee bean


  1. Prepare a syrup by placing the sugar, water, lemon peel, cinnamon, orange peel and coffee bean in a pan and bringing the mixture to 120°C (250°F). A thick syrup should have formed by now.
  2. Remove the pan from the heat and let it cool down slightly.
  3. Add the almond flour and egg yolks to the syrup and stir thoroughly.
  4. Divide the dessert in equal portions in glasses or ramekins.
  5. Leave to chill in refrigerator and serve when ready.
