- 200g (7oz) sugar
- 200g (7oz) water
- 150g (5oz) almond flour, toasted
- 4 egg yolks, whisked
- Lemon peel
- Cinnamon stick
- Orange peel
- Coffee bean
Instructions
- Prepare a syrup by placing the sugar, water, lemon peel, cinnamon, orange peel and coffee bean in a pan and bringing the mixture to 120°C (250°F). A thick syrup should have formed by now.
- Remove the pan from the heat and let it cool down slightly.
- Add the almond flour and egg yolks to the syrup and stir thoroughly.
- Divide the dessert in equal portions in glasses or ramekins.
- Leave to chill in refrigerator and serve when ready.
