Coriander and Chili Marinade

Ingredients

  • 125ml (1/2 cup) sesame oil
  • 6 cloves garlic
  • 2 big knobs fresh ginger root, peeled
  • 2 red chilis
  • 2 cups coriander, washed
  • 30ml (2 tbsp) brown sugar [optional]
  • 5ml (1 tsp) salt [optional]
  • 1.5kg (3 lbs) mini chicken fillets

Instructions

  1. Place the oil, garlic, ginger, chili, coriander, sugar and salt in a food processor and blend.
  2. Arrange the chicken in a container and pour the marinade over. Mix thoroughly ensuring that all surfaces of the chicken are covered with marinade.
  3. Leave to marinate overnight.
  4. Grill the chicken on the barbecue or bake in the oven.
