    Cheesy broccoli soup made with stilton cheese instead of cheddar? What a treat! Stilton is a rich and mellow cheese that compliments broccoli's sweetness in this broccoli and stilton soup recipe.

    This delicious and creamy soup is made of uncomplicated ingredients and is super easy to make for lunch or dinner. Broccoli, onion, celery, vegetable stock, double cream, and stilton come together in the food processor for a silky soup that is packed with flavour.

    Garnish with walnuts, a typical accompaniment to stilton, and you have this irresistible broccoli and stilton soup.

    Broccoli and stilton soup is a great meal anytime you are craving a creamy broccoli soup recipe that isn't super heavy. Cook a big batch of this soup recipe and enjoy the leftovers for weekday lunches that you won't have to put much thought into. This is sure to become one of your favourite soups!

    • Chef's knife - use a good sharp knife to cut your broccoli florets, onion, and celery for this soup recipe
    • Cutting board - use a plastic cutting board to cut up all your ingredients for this delicious soup and make for an easily clean up afterwards
    • Blender - a high powered blender will make sure that all of your ingredients come out silky and smooth. Instead of a blender you can also use a soup maker if you have one.
    • Stick blender - to make for easier clean up and less transferring of the broccoli and stilton soup, use a stick blender to blend ingredients directly in the large pan

    Stilton - stilton is a cow's milk cheese that is crumbly, creamy, and gluten free. The flavours of creamy stilton cheese are rich and complex, and pair beautifully with broccoli. If you prefer other blue cheese than a crumbled stilton you can easily sub in a gorgonzola or a roquefort.

    How to Make This Recipe

    Gently fry the onion and celery in the butter and oil until softened.

    Top Tip

    Don't toss those stalks! Use chopped broccoli stalk in addition to broccoli florets in this broccoli and stilton soup. The stalks are full of flavour and nutrition, and won't affect the texture since they are blended!

    Cream

    Instead of double cream in your soup, opt for a healthy version using creme fraiche. Creme fraiche is a cultured thickened cream that is used in lots or recipes.

    Tangy and fresher tasting than cream, creme fraiche will add a little extra flavour to your broccoli and stilton soup. To make this soup even lighter and healthier, use more stock in place of any dairy.

    Stock

    If you want to have a bit more flavor in your broccoli and stilton soup and don't care about keeping it vegetarian, use chicken stock instead of veggie stock.

    Cheese

    If you can’t get hold of stilton cheese or don't care for it, you can substitute it with any other type of blue cheese you can get your hands on.

    Top Tip

    You can use leftover broccoli to make this broccoli and stilton soup. Instead of cooking raw broccoli in the stock for 10 minutes, add the cooked broccoli a few minutes before the cream to allow it to warm up and soften a little. Then, just blend it as you would normally.

    Description

    Broccoli and Stilton Soup, this creamy and delicious soup is super easy and can be made in under an hour. Serve with fresh bread.


    Ingredients

    Scale
    • 15ml (1 tbsp) oil
    • 28g (2 tbsp) butter
    • 1 large onion, chopped
    • 2 celery stalks, chopped
    • 3 heads broccoli, roughly chopped
    • 1.5L (6 cups) vegetable stock
    • 250ml (1 cup) double cream
    • 170g (6oz) stilton cheese, crumbled
    • 12 walnut halves, chopped

    Instructions

    1. Heat the oil and butter in a large saucepan and fry the onion and celery for 5 minutes while stirring constantly.
    2. When the vegetables have softened, tip in the broccoli and pour in the vegetable stock. Cook for 10-15 minutes until the vegetables are soft. 
    3. Pour in the double cream and let it heat through for 2 minutes. 
    4. Transfer the contents, plus half of the blue cheese, to a blender and blitz until smooth. 
    5. Divide the soup evenly between bowls and garnish with the remaining crumbled cheese and chopped walnuts. Serve immediately. Enjoy!

    Notes

    • The 3 broccoli heads that I used weighed just over 1kg (2.2lbs). 
    • Don’t just use the florets of the broccoli, add the stalks as well!
    • If you can’t get hold of stilton, you can substitute it with any other type of blue cheese you can get your hands on.
    • For a lighter version of this soup you can replace the double cream with creme fraiche. The healthiest route would be to omit all types of cream and replace it with more stock. 
    • If you’re not following a keto or low carb diet, you can substitute some of the broccoli with potato.

      I love the combination of broccoli and blue cheese in a soup, but it is the walnut sprinkle and chantilly that I am really excited by. You are right, the toasted walnut sprinkle would be excellent in salads.

      As a maker of lots of soups this broccoli & Stilton soup is one I will always come back to. Even better if you are using Colston Bassett. Love the idea of a walnut chantilly to turn this into something extra special. Gorgeous photos too!
