The height of the sides of the wok pan serve to retain heat within the pan, while the rounded shape of helps to conduct heat and keep everything cooking at a high temperature. This is ideal for flash flying and getting the best out of spices. Go for a wok that's at least 28cm, although 30cm would be ideal.
- Curved spatula – a curved wooden spatula is the perfect companion for your wok. The curved shape helps to get into the corners to keep those fabulous ingredients moving as they quickly cook.

Fry the spring onions and chillies in a wok over high heat.

A round, full bodied red pinot noir would work wonderfully well with the spices in this recipe, as would an off-dry white wine like a Riesling.
Popular Substitutions
- Replace the spring onions with finely chopped shallots for a stronger onion flavour.
- If you're not a fan of heat, omit the chillies from the dish. You can replace them with peppers or use a mild chilli.
- Use sesame oil in place of vegetable oil for a more authentic Chinese flavour. You could also use a canola oil spray if you want to use less oil.
- Making Chinese salt and pepper seasoning is simple. However, if you can't find the ingredients or don't have the time, you can replace it with Chinese five spice.
- If you can't get hold of fresh chillies, use chilli powder. A teaspoon will do.

Ingredients
- oil, for deep frying
- 20 mini vegetable spring rolls
- 15ml (1 tbsp) vegetable oil
- 6 spring onions, finely chopped
- 2 red chillies, finely sliced
- 5g (1 tsp) salt and pepper seasoning
Instructions
- Cook the Spring Rolls: Fry the spring rolls according to package instructions. Each spring roll takes about 5 minutes to deep fry until golden and crispy. Cook in batches so as to not overcrowd the pot. Drain on paper towels and set aside until you’re ready to finish the recipe in the wok.
- Heat the oil over a high heat in a wok.
- Stir fry the spring onions and chillies for 1 minute then add the spring rolls.
- Sprinkle with the seasoning and then fry for another 1-2 minutes until the spring rolls are heated through.
