Description
An indulgent slow cooker chocolate lava cake with a rich, gooey centre and soft, cake-like top. Easy to make and perfect served warm with cream or ice cream.

For the sponge:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- Pinch of sea salt flakes
- 1 cup whole milk
- 1/4 cup (1/2 stick) unsalted butter, melted, plus extra for greasing
- 1 teaspoon vanilla extract
For the lava layer:
- 1 cup light brown sugar, packed
- 1/2 cup unsweetened cocoa powder
- 3 cups boiling water
Instructions
- Lightly grease the inside of your slow cooker with a bit of butter.
- To make the sponge, sift together the dry ingredients – flour, baking powder, sugar, cocoa powder, and salt in a large bowl.
- Create a well in the center and pour in the milk, melted butter, and vanilla. Stir until just combined; no need to overmix with an electric mixer.
- For the lava layer, mix together the brown sugar and cocoa in a separate bowl.
- Spoon the chocolate cake mix into the greased slow cooker, then sprinkle the cocoa–sugar mixture evenly over the top.
- Carefully pour the boiling water over everything. Do not stir! The hot water will sink to the bottom, forming a luscious chocolate sauce as it cooks.
- Cover with the lid and cook on high for 3 hours, or until the top looks set and the inside is gooey and super moist.
- Serve straight from the pot with a drizzle of cream or a scoop of vanilla ice cream.
Notes
For extra indulgence, sprinkle chocolate chips into the pudding mix before cooking. White or dark, both work beautifully, as desired.
