Ingredients

  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 1 teaspoon fenugreek seeds
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1.5 inches fresh ginger, minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon hot paprika
  • 1/2 teaspoon chili powder
  • 1 tablespoon tomato puree
  • 1 tablespoon tamarind paste
  • 1/4 cup fresh cilantro leaves and stems, chopped
  • 1/2 teaspoon sea salt
  • 1/2 lemon, juiced

Instructions

  1. Heat the vegetable oil in a medium-sized pan over medium heat.
  2. Add the cumin seeds, coriander seeds, and fenugreek seeds (if using) to the oil and fry them for about 1-2 minutes until they start to sizzle and become fragrant.
  3. Add the finely chopped onion to the pan and sauté until golden brown, about 5-7 minutes.
  4. Stir in the minced garlic and ginger, cooking for about 2 minutes until fragrant.
  5. Add the garam masala, turmeric powder, hot paprika, and chili powder to the pan.
  6. Stir and cook for 1-2 minutes to combine the flavors with the onions and fried spices.
  7. Add the tomato puree and tamarind paste to the pan, mixing well with the spices and onions.
  8. Cook for another 2-3 minutes to allow the flavors to meld together.
  9. Transfer the entire mixture to a blender or food processor. Add the fresh cilantro, sea salt, and lemon juice.
  10. Blend until smooth. If the paste is too thick, you can add a little more oil or a small amount of water to achieve the desired consistency.
  11. Use the paste immediately to marinate chicken, paneer, or vegetables, or store it in an airtight container in the refrigerator for up to a month.
