Ingredients

  • 1 1/2 cups milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups glutinous rice flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the waffle iron.
  2. Place the milk, eggs, and vanilla in a large mixing bowl and whisk until smooth.
  3. Mix the flour, sugar, baking powder, and salt in another large bowl. 
  4. Slowly pour the wet ingredients into the dry ones, whisking constantly until the batter is smooth and lump-free.
  5. Brush the waffle iron with oil or use nonstick cooking spray. 
  6. Fill the iron just enough to cover the surface but not cause spillage. The size of your waffle iron will determine this, but about ½ cups worked for me.
  7. Cook for 3-5 minutes or until the golden brown waffle is cooked.
  8. Top it with plain yogurt, blueberries, and honey to serve it for breakfast. You can serve it as a dessert with vanilla ice cream and fresh berries. Enjoy!

Notes

  • Another name for glutinous rice flour is mochi or mochiko flour. 
  • The amount of waffles yielded depends on the size of your waffle iron.
