Description

This easy and delicious homemade Peach Chutney is best served as part of a cheeseboard or with meat.


Ingredients

  • 2kg (4 1/2 lbs) peaches, chopped
  • 675g (1 1/2 lb) red onions, finely chopped
  • 1 lemon, juice and rind
  • 675ml (2 1/2 cups) red wine vinegar
  • 1kg (4 cups) brown sugar
  • 150g (1 cup) raisins, chopped
  • 5cm (2 in) fresh ginger root, grated
  • 3g (1 tsp) ground cinnamon
  • 11g (1 tbsp) mustard seeds
  • 4 cardamom pods, crushed
  • 2g (1 tsp) dried chilli flakes
  • 6g (1 tsp) salt

Instructions

  1. Place all the ingredients in a large saucepan. 
  2. Stir over a medium heat until all the sugar has dissolved. 
  3. Turn up the heat until a boiling point is reached, then lower it to reach a steady simmer. Cook for 2 hours or until the mixture is thick. 
  4. Pour the chutney into hot sterilized jars and seal immediately. 
  5. Store in a cool, dark place for a month to let the chutney mature. 
  6. Serve as part of a cheeseboard. Enjoy!
