How to make chicken burrito casserole

For this recipe, you need shredded rotisserie chicken, corn, brown rice, black beans, peppers, onion, oil, tomato paste, jalapenos, broth and spices.

Place the rice, chopped onion and peppers, jalapenos, tomato paste and spices in a large baking dish. I used a 9x13in one.

Give everything a good stir.

Add the broth and stir well again.

Add the chicken, beans, and corn.

Give everything one last good stir.

Top with copious amounts of grated cheese. Cover with foil first and bake. In the last stretch, remove the foil and bake until the cheese bubbles and form a delectable crust. See photo below.

Ingredients
- ½ cup red onion, finely chopped
- 1 red bell pepper, diced
- 1 green chili, seeds removed and minced
- 1 cup uncooked rice (long-grain, brown)
- 3 tablespoons fajita seasoning
- 3 cups chicken broth
- 1 tablespoon olive oil
- 2 tablespoons tomato paste
- 4 cups cooked shredded chicken
- 1 (14 oz) can black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 ½ cups shredded cheddar cheese
- Optional garnishes: fresh cilantro, sliced green onions, sour cream, crushed tortilla chips
Instructions
- Preheat the oven to 400°F (204°C).
- In a 9x13 inch baking dish, add onion, bell pepper, green chili, and uncooked brown rice. Sprinkle in the fajita seasoning and mix well to coat the rice and veggies evenly.
