How to make Greek salad dressing

You need extra virgin olive oil, red wine vinegar, mustard, dried oregano, garlic, salt and pepper for this salad dressing. Honey is optional but it makes for a nice addition!

Place all the ingredients, except the oil, in a high powered blender and blitz until smooth. While it's running, slowly pour in the oil until the sauce emulsifies. Store in the fridge if you're not going to use it immediately. It will keep for a few days.

A zesty Greek salad dressing made with olive oil, red wine vinegar, garlic and herbs. Bright, fresh and perfectly balanced to bring bold flavours to any salad.
Ingredients
- ½ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 1 teaspoon Dijon mustard
- 2 garlic cloves, finely minced
- 1 teaspoon dried oregano
- ½ teaspoon fine sea salt (adjust to taste)
- ¼ teaspoon black pepper
- Optional: ½ teaspoon sugar, honey or maple syrup (for balance)
Instructions
- Whisk together the red wine vinegar, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper in a bowl.
- Slowly pour in the olive oil while whisking continuously to combine the ingredient and help the dressing emulsify.
