    Comforting ground beef hamburger hashbrown casserole is a delicious recipe that will quickly become a family favorite! Layers of ground beef and veggies topped with hash browns and cheese create a crispy, cheesy topping for a casserole dish that makes a cozy and filling weekday dinner.

    This hamburger hashbrown casserole recipe is inspired by lamb heart stew, another hearty dish on my site. Try pairing this filling dish with a light soup appetizer like broccoli and pea soup, because it’s always soup season!

    Making a casserole is a great way to feed a hungry crowd, and this ground beef hamburger hash brown casserole checks all the boxes. Make enough for a weeknight dinner for the family or to feed friends at a potluck, and expect plenty of compliments on this tasty dish!

    How To Make This Recipe

    Add the Worcestershire sauce, tomato paste, salt and dried oregano. Cook for 2 minutes then remove from the pan.

    Gently fry the onions and garlic until softened.

    Let it bubble away for 3 minutes then remove from the heat.

    Peel and grate the potatoes.

    Use a tea towel to wring out the excess moisture. Season with salt and pepper.

    Top Tip

    If shredding the potatoes ahead of time be sure to keep them in water to prevent oxidizing. Otherwise, tossing them in oil after they have been dried will also keep them from turning brown before being added to your hamburger hash browns casserole.

    Sour cream

    Ground beef mixture

    Instead of ground beef, try ground turkey for a leaner dish with less fat than ground beef. Ground turkey has a different flavor than ground beef, but is equally as delicious and you may even prefer it!

    Potatoes

    For a shortcut, use frozen hash browns instead of shredding your own hash browns. To prevent the casserole from becoming soggy or watery, be sure to defrost hash browns before adding them to the rest of the casserole.

    Variations to This Recipe

    • For the vegetable filling, use a can cream of chicken soup or cream of mushroom soup instead of sour cream to get a creamier and more robust flavor in your cheesy ground beef hash brown casserole. A can cream of chicken soup or cream of mushroom soup will both give the casserole a slightly different flavor depending on your preference.

    Description

    You’ve never had a casserole like this before. This warming hamburger hashbrown casserole will quickly become a family favourite. Serve with your favourite greens. 


    Ingredients

    Scale

    Browned Beef

    • 15ml (1 tbsp) olive oil
    • 900g (2 lbs) ground beef
    • 15ml (1 tbsp) Worcestershire sauce
    • 15ml (1 tbsp) tomato paste
    • 6g (1 tsp) salt
    • 4g (2 tsp) dried oregano

    Vegetable Filling

    • 15ml (1 tbsp) olive oil
    • 1 large onion, finely chopped
    • 4 garlic cloves, crushed
    • 2 celery stalks, finely chopped
    • 225g (3 medium) carrots, finely chopped
    • 250ml (1 cup) beef stock
    • 250ml (1 cup) sour cream
    • 120g (1 cup) shredded cheddar cheese

    Topping

    • 15ml (1 tbsp) olive oil
    • 900g (2lbs) potatoes, peeled
    • 120g (1 cup) shredded cheddar cheese

    Instructions

    1. Preheat the oven to 190°C/fan 170°C/375°F/gas mark 5.
    2. For the Browned Beef: Heat the oil in a large frying pan and brown the beef while stirring constantly. 
    3. When most of the liquid has evaporated and meat browned, add the Worcestershire sauce, tomato paste, salt and oregano. Stir well and cook for a further 2 minutes.
    4. Scoop out the meat and set aside. 
    5. For the Vegetable Filling: Using the same frying pan, gently fry the onions in the oil for 3 minutes. 
    6. Add the garlic, celery and carrots to the pan and stir fry for 10 minutes until the vegetables have softened and reduced in volume. 
    7. Tip in the browned beef, along with the stock, sour cream and cheese. Give everything a good stir and let it bubble away for 3 minutes, or until the cheese has melted. Transfer the contents to a 2 quart baking dish (see notes).
    8. Grate the potatoes or shred them in a food processor. Place the shredded potatoes in a dish towel and squeeze out the excess water from the potatoes. Fluff the potatoes up in a bowl, stir in the oil and season well. 
    9. Evenly top the ground beef filling with the grated potatoes. 
    10. Transfer the dish ro the oven and bake for 40 to 50 minutes or until the potatoes are cooked and browned on top. 
    11. Sprinkle the cheese evenly over the potatoes and bake for 5 minutes or until the cheese has melted. 
    12. Serve immediately with your favorite greens (we had buttered green beans!) on the side. Enjoy!

    Notes

    • If you don’t have a 2 quart baking dish, a 8 x 8 x 2in square dish would suffice as well as a 9x13in one.
