What’s the difference between tiffin and Rocky Road?
Tiffin is the British word used to describe this delicious dessert. The word comes from the term ‘tiffing,’ meaning to take a little snack, and became used in the British Raj in India, specifically referring to the time when tea would be taken.
Later, the name tiffin was given to the chocolate and dried fruit biscuit that became popular in Britain in the late 19th century.

Popular substitutions for this recipe
Here are a few ideas when it comes to swapping ingredients:
- If you don’t like dates then you can substitute them for equal quantities of raisins or even leave them out all together
- For the crushed biscuits in this malteser tiffin recipe, you can use rich tea biscuits if you prefer them to digestives
- You could also use ginger nuts if you fancy bringing a little subtle spice to your Malteser tiffin bars
Variations to this recipe
- This recipe will work with whichever combination of milk and dark chocolate you choose. If you only want milk or dark that will work but I prefer the equal mix. Unfortunately, this recipe will not work if you try to substitute the chocolate with white chocolate
- You can use chocolate chips instead of chopped chocolate
- If you want your Malteser tiffin bars to be extra rich, add a dash of condensed milk into the melted chocolate mixture
- If you like a nutty crunch to your tiffin, add chopped hazelnuts or almonds into the mixture. You could also use chocolate that contains either hazelnuts or almonds
Top Tips
- Make cuts to the corner of your greaseproof paper when lining your baking tin. This allows it to fit more snugly.
- Make sure you give the tiffin mixture a good stir to get all the crushed biscuits nicely coated.
- Allow it to cool completely before you divide up the tiffin. If it hasn’t set properly, your tiffin might crumble. Four hours is ideal, but overnight is the best way to ensure your tiffin has set properly.
