Variations To This Recipe
You can use mini Jammie Dodger biscuits, but you’ll need to adjust the quantities used in the recipe accordingly.
Popular substitutions
- If you can't get hold of vanilla paste, you can replace it with vanilla extract. So, instead of adding eggs and vanilla paste to create your batter, you add eggs and vanilla extract. Substitute at a ratio of 1:1 – so, one teaspoon of vanilla extract for one teaspoon of vanilla paste in this instance.
- Add white chocolate chips in place of chopped white chocolate if you prefer.
- You can use any type of jam biscuit with this recipe. Fox's jam and cream biscuits work well, for example.
- Not a fan of raspberry jam? Use this Strawberry Jam Recipe instead. You can even add lemon curd in place of jam for a lemony twist!
- You can replace light brown sugar with regular caster sugar
Top Tips
- Add the flour slowly to your batter mix. This is the trick when it comes to getting a deliciously smooth blondie mixture texture and consistency.
- Don't skimp on the quality of your jam. Go for something decent and you'll notice the difference.
What are jammie dodger blondies?
Jammie dodger biscuits are a type of hugely popular biscuit in the UK – particularly with kids! They've been a childhood favourite for decades now and they are absolutely delicious.
Still, us sweet-toothed bakers have decided to take things to the next level. Jammie dodger blondies use this legendary biscuit as a base to make an oven baked beauty.
What flavour are blondies?
Instead of the intense chocolate flavour of brownies, blondies have a lighter taste and consistency. This blondie recipe uses white chocolate as an essential ingredient, so you get a less deep, rich flavour, but still chocolatey and delicious.
What's the difference between blondies and brownies?
Essentially, the difference is in the colour, which is achieved through the ingredients used.
For instance, blondies use vanilla paste or extract as well as white sugar and white chocolate chips, whereas brownies use dark or milk chocolate as well as cocoa powder.
Like brownies, blondies can seem a bit tricky to get right. However, with a bit of practice and by following this recipe precisely, you'll get perfect blondies that are chewy, gooey and utterly irresistible!
Can I make this recipe without jammie dodger biscuits?
Maybe you can't get hold of them. Or maybe you're not a jammie dodger kind of person. Either way, you'll be wanting to know whether you can use a different biscuit to make this recipe.
Luckily, the answer is yes!
You can use any type of white biscuit or cookie, although go for one with jam for best results.
How do you know when jammie dodger blondies are ready?
You should bake your blondies for about 35 minutes. Different ovens work differently – my oven took a good 45 minutes until it was done, so be sure to check around the 30 minute mark to see if yours is done.
You'll also notice that the jammie dodger blondie block is done when the edges start to turn golden brown.
A good way to test for doneness is to use the skewer test. Insert a wooden or metal skewer into the blondie block – if it comes out clean, not covered in gooey batter, then it is ready.
What is the best kind of chocolate to use?
Any kind of white chocolate is perfect for this recipe. Try to go for a decent kind – you'll most certainly taste the difference if you do.
I recommend going with Callebaut chocolates, which are perfect for using in baking recipes.
Are blondies supposed to be wet in the middle?
Yes... a good blondie is firm on the outside and slightly gooey on the inside.
How do you fix undercooked blondies?
Whether it's because your oven wasn't hot enough, because you removed them too early or because you over mixed the blondie batter, there are occasions when your blondies will seem undercooked.
If this is the case, cover them with foil and return them to the oven for 5-minute intervals until done.
What type of butter should I use to make blondies?
I recommend using unsalted butter when baking. This is because you can have a better control over how much salt is going into the dish. Salted butter is best used with bread or to flavor savoury dishes.
How do I store leftovers?
You can store these blondies in an airtight container for up to four days. I'm willing to be they won’t last that long though!
Can you freeze jammie dodger blondies?
Yes, you can absolutely free these jammie dodger blondies! First, allow them to fully cool. Then, flash freeze them in the baking tin or on a baking tray. This involves freezing them for an hour or so.
Next, place the semi frozen brownies into an airtight container. They will stay fresh for up to three months.

Jammie Dodger Blondies
- Total Time: 1 hour 10 minutes
- Yield: 15 portions 1x
- Diet: Vegetarian
Description
These Jammie Dodger Blondies are irresistible for both kids and adults. This recipe is easy for anyone to follow.
Ingredients
- 200g (¾ cup) butter, melted
- 250g (1 ¼ cup) light brown sugar
- 3 large eggs
- 5ml (1 tsp) vanilla paste
- 275g (2 ¼ cups) plain flour
- 150g (1 cup) white chocolate, chopped into small pieces
- 200g (¾ cup) smooth raspberry jam
- 21 Jammie Dodgers
Instructions
- Preheat the oven to 180°C/fan 160°C/355°F/gas mark 4.
- Line a 30x20cm (12x8in) baking tin with non-stick parchment paper.
- Using a stand mixer preferably, whisk the melted butter and sugar together until the mixture gets light and creamy. Due to the size of the sugar specks, this will take a little while.
- Add the eggs and vanilla and beat until the mixture is smooth.
- Keep the mixer running on a slow speed and add the flour one tablespoon at a time until everything is incorporated. Don’t forget to scrape the sides of the bowl to ensure everything is evenly distributed.
- Fold in the white chocolate.
- Take 6 Jammie Dodgers and quarter them. Fold the quarters into the blondie batter.
- Tip the mixture into the lined tin and spread it into an even layer.
- Heat the jam slightly (a quick zap in the microwaves will do!) to make it more pliable. Spread the jam evenly on top of the batter. It doesn’t have to be perfect!
- Place the remaining Jammie Dodgers on top.
- Bake for 35 minutes, or until cooked. My oven took a good 45 minutes until it was done. Use the skewer test, i.e. it should come out clean, not covered in gooey batter.
- Once the big blondie has cooled, cut into portion sizes. Enjoy!
Notes
- Store in an airtight container for up to 4 days. It won’t last that long though!
- You can use smaller Jammie Dodgers, but you’ll need to adjust the quantities used in the recipe accordingly.
